Here's a flourless cookie recipe that is a nice gluten-free choice for those who have allergies. I've always made them as peanut butter cookies, but a good friend of mine is allergic to legumes, and that gave me the idea to substitute nut butter. We can get almond butter at our local supermarket. OMG, I may never go back to peanut butter again!
